Copycat Recipe: Chipotle Honey Vinaigrette

I love chipotles. I love the flavor it brings to food. One delicious use of the chipotle pepper is in Chipotle’s salad dressing, Chipotle Honey Vinaigrette. One reason I love eating at Chipotle is because of that dressing. Seriously, I could drink that dressing. Every time I go to Chipotle no matter what I order, I get the dressing and put it on my salad, rice bowl, burritos or tacos. I have spent a lot of time trying multiple recipes to replicate the dressing. I have taken the ingredients on the website and come up with a recipe that I think is pretty darn close. The dressing is a great addition to any Mexican-style dish. (For anyone counting I seriously used the word chipotle in that paragraph 6 times!!!)

Since Cinco De Mayo is right around the corner I thought it was a great time to share. Not that this is the most authentic recipe in the world, but here it is anyways. If you are looking for a more authentic recipe for Cinco De Mayo try this Salsa Verde. It is amazing as well!

Chipotle Honey Vinaigrette

Ingredients:
1/2 cup red wine vinegar
1/3 cup of honey
3/4 cup vegetable oil
1/2 teaspoon dried oregano
1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon of cumin
1/4 teaspoon of garlic powder
2 chopped up chipotle peppers and 2 tbsp of adobo sauce

Directions:

Add all ingredients into blender and blend well!
