Strawberry Topped Mini Cheesecakes with Oreo Crust

This is the longest I have gone without posting. I felt like I was barely even on the internet the past few weeks. I almost missed the blue/black and white/gold dress debate completely. The month of February kicked my butt. Everyday something unexpected came up. It seemed that even the smallest things went wrong. There were a few days where I felt a total meltdown was necessary. When I felt like that I started praying and thinking of all the blessings I do have in my life. That got me through many tough days. That and my amazing husband. I am going to gush a little bit. Sorry…You’ve been warned. I have been under a lot of pressure lately and he has been so supportive and amazing. He has been there for hugs, uplifting words, and has given me his undivided attention. I am so grateful for his love and friendship. He truly is an amazing partner and best friend.

Due to the unending craziness, I wanted to make a little something special for him. Since spring is around the corner strawberries have made an appearance at the store. We have been hooked on strawberries in my house. I decided to incorporate the strawberries into my sweet treat. My husband loves cheesecake, so I went for a mini cheesecake dessert. These strawberry mini cheesecakes with Golden Oreo crust are the perfect after dinner treat. Since they are mini you don’t feel so guilty eating them…unless you are like me and you eat too many.

I love using Golden Oreos as the crust. It makes the crust part so simple and delicious!

First, whip up the cheesecake ingredients.

They bake up so beautifully. Using cupcake liners makes clean up (and eating) quick and easy.

Mini Strawberry Cheesecake with Oreo Strawberry Mini Cheesecake

Strawberry Topped Mini Cheesecakes with Oreo Crust

Ingredients

Crust
Golden Oreos

Cheesecake

16 oz cream cheese
3/4 cup granulated sugar
1/4 cup yogurt or sour cream
2 large eggs
1 teaspoon vanilla extract

Strawberry Topping

1 qt (4 cups) fresh strawberries, hulled and sliced
1/3 cup granulated sugar
1 tablespoon lemon juice
1/4 cup water

Directions

For Crust: Line a cupcake pan with cupcake liners. Place one Golden Oreo in each cupcake liner.

For Cheesecake: In mixer, beat the cream cheese until completely smooth. Add sugar and yogurt and beat on medium speed until combined. Add the eggs, one at a time and beat on low.

Scoop batter into the cupcake liners on top of Golden Oreo until nearly full. Bake for approximately 20 minutes. The centers will rise, don’t worry if it is slightly jiggly. The cheesecake will set after removed. Remove from the oven and allow to cool completely at room temperature. Then chill in the refrigerator for at least 1 hour.

For Strawberry Topping: Slice strawberries and add lemon juice, sugar, and water to a small pot. Place on the stove until simmering. Stir the mixture until thickened. The mixture will also reduce. Take off the heat once the topping has thickened.

Right before serving, top each cheesecake with strawberry sauce. Cover cheesecakes tightly and store in the refrigerator.

This little guy was delicious. I then proceeded to eat two of his friends. This recipe is a cute mini version of a decadent dessert. It’s perfect for showers or just an after dinner treat for your family. Enjoy friends!
