Bacon Wrapped Jalapeno Poppers

Football season is here. Honestly, I am not that big of a fan. Hockey season is around the corner…and that I DO care about. I like having a good snack to go with a hockey game.  These bacon wrapped jalapeno poppers do just the trick when the time comes. I made these last weekend after these beautiful fresh jalapenos came in our CSA box. The hardest part was not deciding what to do with the jalapenos, but deciding which awesome idea to go with. My husband has been begging me to make jalapeno poppers, but the thought of cutting, stuffing and deep frying was too much for me this particular afternoon. I came up with a new plan. These were so quick, easy, and good. All it takes is jalapenos,  a simple cheese mix up and then you slide them into the oven. We ate them all. It ruined our dinner. I wish I felt bad about that, but they were so good, I just didn’t.

Next I cut them up lengthwise. Watch the juice and make sure you wash your hands before touching anything. You don’t want to rub your eyes.

Then take a spoon and take all the seeds out. If you like things really spicy, leave some in.

Next mix up the cheese and minced garlic.

Take a spoon and stuff. Try not to put the cheese right in your mouth.

After all the jalapenos are stuffed, grab the bacon and wrap each individual jalapeno.

Now that they are wrapped up, bake them at 400 degrees on a baking sheet. When you pull them out of the oven they smell so good. Try not to ruin your dinner. Nevermind, do ruin your dinner. You only live once and these are worth it!

Bacon Wrapped Jalapeno Poppers:
JalapenoPoppers

Ingredients:
10-12 Jalapenos
6-12 slices of bacon
1/2 cup shredded cheddar cheese
1/2 cup of cream cheese
1 tsp of minced garlic

(Note: These proportions all depend on the size of the pepper. If you  have big peppers you may need more cheese mixture. Sometimes half a piece of bacon will wrap the whole jalapeno. Sometimes you need a full piece. So work accordingly. If you have 12 large jalapenos, you will need 12 slices of bacon and you may need more cheese mixture. Whereas if you have 10 medium sized jalapenos 6 pieces of bacon will do and you will have leftovers of the cheese mixture. Adjust as needed.)

Directions:
Cut the jalapenos lengthwise and take out the seeds.

Mix the cream cheese, cheddar cheese, and garlic in a bowl. Take a spoon and stuff each half pepper with the cheese mixture.

After they are stuffed wrap each jalapeno with a piece of bacon. (You can use a half piece of bacon or a whole piece, depending on the size of your pepper.)

Lay the wrapped peppers on a baking sheet. Bake at 400 degrees for about 15 minutes or until bacon is crispy.
(Bacon grease will get on the pan so make sure your baking sheet has a good sides and carefully pull it out.)

Watch the hockey game and eat jalapeno poppers!
